Learn how to make Matar Ka Halwa at home with our Chef Varun

Green peas halwa is a perfect vegan option for dessert. It is an easy, delicious and decadent dessert ideal for any occasion.

Ingredients:
2 cups Green Peas
1 tbsp Ghee
4 tbsp Cashew Nuts
4 tbsp Almonds (chopped)
3 tbsp Ghee
½ cup Cottage Cheese (crumbled)
½ cup Sugar
1 tsp Cardamom Powder

00:00Well, today let me show you quite an unusual seasonal recipe.
00:03A recipe with fresh Garden Peas.
00:06Well, quite a lost recipe at that.
00:08Let's revive it today.
00:09Matar Ka Halwa.
00:11Let's begin.
00:12Well, here you have fresh Garden Peas.
00:14All you need to do is, snip the end.
00:19String it like so.
00:21And open it up.
00:24Just like so.
00:27Push all of this out.
00:31And similarly, get all your Garden Peas in a bowl like so.
00:37Let's keep this aside.
00:38And move on to crushing the Peas.
00:40I'm going to transfer this straight into the jar.
00:45We crush this into a fine paste.
00:51Let's turn the flame on and add in a little bit of Ghee.
00:54Time to add in Cashew Nuts.
00:57And sauté these till they're golden brown in colour.
01:00Roughly cut Almonds.
01:03Let's sauté this on medium flame.
01:05And move this aside.
01:13In the same Kadhai, let's add in the remaining Ghee.
01:16And immediately to this, let's add in the Green Pea Pulp.
01:20This case, remember the fact that the Green Peas were raw.
01:25Let's stir this well.
01:26And ensure this cooks perfectly well.
01:29At this stage, the Peas that are looking pasty,
01:32will eventually become slightly grittier.
01:38The Green Peas have cooked perfectly well.
01:40If you see, the Ghee is now just kind of beginning to release
01:44from the sides of the pan.
01:45This is the time when we add in Crumbled Cottage Cheese.
01:49Which of course is going to give it that bounce while eating.
01:54That sponginess, that bounce, that mouthfeel.
01:57Is going to be very unique and very different.
01:59Let's also sauté this on medium flame.
02:02Like so.
02:03Of course while doing all of this, you can keep breaking the grits.
02:06And that's a complete personal choice.
02:08Well by all means, if you want to keep this recipe usual,
02:11you can add in Milk, you can add in Khoya, Mawa.
02:14Choice is completely yours, but I for a change,
02:16prefer Cottage Cheese or Paneer in this recipe.
02:20Time to add in Sugar.
02:21Well once the Sugar starts melting, you'll see that this entire mixture
02:25just kind of begins to liquefy.
02:27And that's exactly how we want it to.
02:30Just keep mixing this, ensure that the Sugar does not caramelise.
02:33Because that eventually will change the colour of this Halwa.
02:38Time to add in Green Cardamom.
02:41Of course in its powdered form.
02:44Half of the Dry Fruits, like so.
02:47And give this one final mix.
02:48With this, your Matar Halwa or Green Peas Halwa
02:51is done and ready.
02:52Well absolutely timely because Green Peas are all across the vegetable markets.
