These garlic roasted portobello mushrooms make for one incredible vegetarian dinner. In this video, Matthew Francis makes caprese stuffed portobello mushrooms in the oven. Each mushroom is stuffed with a caprese salad-style mixture containing juicy cherry tomatoes, melted mozzarella cheese, and fresh herbs.

00:03After trimming and cleaning your mushrooms, brush both sides with a garlic and olive oil mix
00:08and then roast in the oven until almost soft. Then add some cutesy small halved cherry tomatoes,
00:14mozzarella pearls, basil, and olive oil in a bowl. Toss together to make a caprese salad in ball form
00:20and then place onto each mushroom. Bake again until the cheese pearls melt and the tomatoes
00:25get nice and juicy. Then sprinkle on some fresh basil and drizzle on some balsamic vinegar.
