00:00Assalam-o-Alaikum, today we are going to make Mixed Veg Biryani
00:03which will look like it is cooked in a pot
00:06and the taste is such that the people who eat it will demand to make it again and again
00:11it is very tasty
00:12and it is very easy to make
00:14and if you add a lot of vegetables, it is also very healthy
00:18so let's start making it
00:20first of all, let's marinate the vegetables
00:22take a bowl, add 1 chopped capsicum, 2 chopped carrots
00:27and 1 cauliflower, it is a small cauliflower, it will be around 1 cup
00:32and 1 cup of freshly peeled peas
00:34and 1 cup of french beans, we will add these vegetables to it
00:38along with this, we will also add 2 medium-sized potatoes to it
00:41here you can take your favorite vegetables
00:44now we will add 3 by 4 cups i.e. 150 grams of yogurt
00:48add 1 teaspoon of salt, I have already added salt, but it may not have been shot
00:53now add 1 teaspoon of red chili powder
00:55and add 1 teaspoon of turmeric powder
00:58and add 1 teaspoon of coriander powder
01:01along with this, we will add a handful of green coriander and mint leaves
01:06and along with this, we will add fried onions
01:08I had fried 2 medium-sized onions, I had fried them golden
01:12so we will add 2 parts to it, we will save 1 part, we will use it during the layering of biryani
01:17let's keep it aside
01:20and we will mix these ingredients well
01:24we will mix it well and leave it for 10-15 minutes for marination
01:28till the time our vegetables are getting marinated, let's prepare a fragrant masala for biryani
01:33add around 1 teaspoon of black pepper, 1 quarter piece of nutmeg
01:381 piece of mace, 6 small cardamoms, 1 big cardamom, 1 clove flower
01:431 teaspoon of white cumin, 2-inch small pieces of cinnamon
01:47and 6-7 cloves, we will put them in a mixer jar
01:50and we will make a fine powder of it
01:52so in this way, our fragrant biryani masala is ready
01:56this masala is very fragrant
01:59and it is sufficient for the amount of biryani we are making
02:02let's start making the biryani
02:04heat around 1 cup of oil in a pot
02:08and when the oil is hot, we will add 1 medium-sized onion, finely sliced
02:14fry the onion till it becomes soft and pinkish
02:19don't fry it too much
02:21because we have already fried the onion
02:24let me tell you that the oil I am using is the same oil in which I fried the onion
02:30this oil has a lot of flavor, so use the same oil in which you fried the onion
02:37when the onion turns pinkish, add 1 tablespoon of ginger-garlic paste
02:43and 5-6 green chilies, sliced from the middle
02:47fry it for 1-1.5 minutes, so that the raw smell of ginger-garlic will go away
02:53after 1-1.5 minutes, add the marinated vegetables
02:58and fry it for 2-3 minutes on high flame
03:02I have fried it for 2-3 minutes and the yogurt and vegetables have released their water
03:08add the biryani masala in the middle
03:16mix it well
03:17and now we have to cook the vegetables in the same water
03:22cover it and cook it on low flame for 15-16 minutes
03:26until the vegetables are 60-70% cooked
03:31do not cook the vegetables 100%
03:34because we have to keep the crunch in the vegetables
03:36if you cook it 100% now and cook it during the dum, then the vegetables will be overcooked
03:43while the vegetables are cooking, let's boil the rice for the biryani
03:47boil 2-2.5 liters of water in a pot
03:49take 4-5 times more water than the rice
03:52I am taking 1.5 kg rice, so I have boiled 2.5 liters of water
03:56add 2 tablespoons of salt
03:59we have to keep the salt open
04:01because the water gets drained, so the rice absorbs less salt
04:05so we will keep high salt in it
04:07add 2 inch cinnamon stick and 2 bay leaves
04:11add juice of half a lemon
04:16add 1 tablespoon of oil to keep the rice fluffy
04:20add 1 teaspoon of shahi jeera
04:23if you don't have shahi jeera, you can use white jeera
04:26which is the normal jeera that you use daily
04:31when the water starts boiling on high flame, we have to add soaked rice
04:35so I have taken 2.5 cups i.e. 1 kg basmati long grain rice
04:39which I had soaked half an hour ago
04:42if you are using sela rice, soak it for at least 1.5-2 hours
04:47now we have to cook the rice so much
04:49that the rice should be about 20% cooked
04:54we don't have to cook them 100% because we have to do the rest of the cooking during the dum
04:58after boiling, I have cooked them for 5-6 minutes
05:01and the rice is about 80% cooked
05:04now we have to take out half a cup of water from it
05:07we will use this water during layering of biryani
05:09so that the rice will be well-dum
05:12and we will strain these rice
05:16here we check the vegetables
05:18I have cooked them for about 16-17 minutes on low flame
05:21our vegetables are about 60-70% cooked
05:25we have to cook them for a while
05:27we don't have to cook them 100%
05:31they should be crunchy like this
05:34now we have to assemble the biryani
05:36I have taken the same pot in which I had boiled the rice
05:41I have applied some oil at the bottom so that the rice won't stick
05:44now we will divide the rice into 3 parts
05:46we will apply the first layer
05:48now we will add some food color and kewra water which I have mixed
05:53now we will add the remaining onions
05:55we will add coriander and mint leaves
05:58now we will add one part of the vegetables which we have cooked along with the biryani
06:03we will use one part later
06:05we will add one part of the rice again
06:07and we will add the rest of the vegetables along with the biryani
06:12now we will add the remaining rice
06:16so our layers are ready
06:18now we have to add the water which we have taken out from the rice
06:23along with that we have to add kewra water and food color
06:26and we will add fried onions, coriander and mint leaves
06:30and for the aroma, I am adding 1 tbsp of clarified butter
06:34it is optional but it will enhance the aroma of the biryani
06:36and the rice will also become soft
06:39now we have to cover it
06:40and now we will cook it on high flame for 2 minutes
06:44and after 2 minutes, we will lower the flame
06:46if your pan is heavy bottom, then you don't have to cover it
06:51and if your pan is light, then you can cover it
06:54and we will cook it on low flame for 15-20 minutes
06:58it has been 15-20 minutes since we have cooked the biryani
07:02and our delicious, fragrant and aromatic mixed veg biryani is ready
07:08this biryani is very fragrant and aromatic
07:11and after eating this biryani, you will not crave for non-veg at all
07:16this biryani is so tasteful that chicken biryani and mutton biryani fail in front of this

08:10I have taken 1 cup of yogurt in which I have added 1 cup of water and whisked it well
08:15now add 1 tsp of salt, 1 tsp of black salt, 1 tsp of roasted cumin, 1 tsp of black pepper powder
08:24and add 1 tsp of crushed red chili and mix it well
08:28so it is mixed well like this
08:31now add 1 cup of finely chopped onion, 1 cup of finely chopped tomato and green chili
08:38you can also add cucumber to this and mix it well
