00:00Chef Tathong is one of the big fans of dried fish products in the Philippines.
00:05And this is his inspiration for the very easy dish he shared with us.
00:10Let's start with the frying of our Daing na Bisugo.
00:15And here it is.
00:16We just sautéed it a little bit to remove the excess salt, right?
00:21So that it won't be too salty.
00:23We'll fry this until it's a bit toasted.
00:26So, what we're doing here is, we're just increasing the amount of ingredients we can use by combining these two main ingredients.
00:35So, we'll just fry this.
00:39We'll set aside our fried Daing.
00:44Because we'll cook it again with our tomatoes.
00:47I like salty food because I think the love for salty food is very Filipino.
00:54The fried Daing won't go to waste, because this will be the base of our Sarsa.
01:05We'll just sauté a little bit of garlic and onion.
01:08And because this is called Kinamatisan, we'll need a lot of ripe tomatoes.

01:17I'll add a little bit of sugar to balance.
01:20And now, we'll add a little bit of soy sauce for color, right?
01:24So, we're combining different forms of saltiness.
01:29We're not using salt, but the saltiness of our Daing, and the saltiness of our soy sauce or fish sauce, so that it'll have umami, right?
01:40We'll also add a little bit of vinegar, right?
01:42So, what we're doing here is, we're balancing everything.
01:47We're not making it too sour.
01:49We're not making it too salty or too sweet.
01:51What we're doing is, we're just balancing the flavors, so that it'll be very delicious.

01:59If you want it to be spicy, we'll add a little bit of chili.

02:04And now, we can now add our fried Daing Bisugo.

02:13So, what will happen here is, the Bisugo will have a tomato flavor.
02:17The tomato will have a Daing flavor.

02:20So, they're now blending.
02:21So, this is very typical of Filipino food.
02:25The blending of flavors in our ingredients.
02:28Let's add a little bit of water so that it'll stew.

02:32We want it to stew.
02:33Cook it a little bit more.
02:35Just a little bit of water.
02:36Then, we'll just let this boil.

02:42It's now cooked.
02:47All the foods of the world is really dependent on salt.
02:52Because without salt, there will be no flavor in your food.
02:56Without the salt, you will not be healthy.
02:59Because it is a carrier of all the minerals that is needed for your internal organs to function properly.
