00:41Before we start asking questions, let me show you first a photo of one of your creations.

01:14You know, that's what's fun about the show that April created.
01:19It's actually a show that's about making things that don't really look real,
01:25but you'll be surprised that it's actually a cake.
01:28But let me ask you, what kind of cake is this?
01:30It's a chocolate fudge cake with a Swiss meringue vanilla buttercream.

01:51So it took you how many hours to bake all this?
01:55This one, maybe five.
01:57Wow!

02:01I mean, on the show, most of the cakes took at least eight.
02:04And we were really, really rushing.
02:07So they're not separate.
02:08Some of them look separate, but they're not.

02:15Underneath, there's one big chocolate cake.
02:17And on top, yes, there's separate chocolate lumpia on top.

02:27It's all about illusion.
02:29You're a good baker, you know.
02:30But where did you learn the sculpture?
02:31Yeah.
02:32Because there's also sculpture and art involved in this.
02:34And not only baking and not only cooking.
02:36Where did you learn that?
02:37I took some art classes in high school.
02:39That's about it.
02:39I think it's just a natural talent for replicating, you know, what I see in different mediums.
02:46In this case, it's cake.
02:48So where do you get your inspiration?
02:49I try to find things that are really interesting,
02:52but also ones that no one has done before.
02:54Where there's a lot of shock value.
02:58So for example, I haven't seen a lumpia in Shanghai cake, right?
03:02I made this especially for you.
03:03So there's something that you can see in a different form in cake.
03:08A very traditional...
03:09It's everybody's favorite Filipino dish here in Canada.
03:12Yes, that's right.
03:14Yeah.
03:15So, you know, whether it's that or something new,
03:17it's always...
03:18I'm always trying to make something new that you haven't seen before.
03:21Of all the cakes that you've done,
03:22what's your most prized creation of all?
03:26This particular cake was of some chicken wings.
03:29And you'll see there's like cooked chicken wings in the front
03:32and raw chicken wings in the back.
03:34But it's all cake.
03:35And so when people see me pick up a raw chicken wing and take a big bite,
03:39they freak out.
03:40I'm sure they do because you know eating raw chicken is kind of like dangerous.
03:47Or hell.
03:47Very dangerous.
03:50But it's fine if it's cake.
03:51It's totally fine if it's chocolate cake.
03:53But that's what makes people sort of alarmed and freaking out.
03:56And that's why that happens to be my favorite one.
03:59Just because of the reaction.

04:01No, because it's beautiful.
04:03You're not a full-time baker.
04:04You're not a full-time chef.
04:06No, you have a regular job.

04:08That's right.
04:09Yeah.
04:10This is just a hobby that you make?
04:14It's just a sort of thing that I do at night after my daughter is in bed.
04:20My daytime...
04:22I'm an educator for a human rights organization here in Canada.
04:26So I teach about human rights and to protect human rights and civil liberties.
04:31And then at nighttime, everybody's asleep.
04:33I put on an apron and make weird cakes.
04:36Do you accept orders if they ask you because they know that you make things like this?
04:41For sure.
04:42Especially now with the show having been out for some time.
04:46I'm getting many, many requests for orders.
04:49Also, interestingly enough, I get invited to be on cool TV shows like this one.
04:55So I'm interested to see what happens.
04:58Maybe there'll be more opportunities to be a Filipino-Canadian
05:02representing the homeland on TV.
05:06And for sure, different brands also are reaching out to me,
05:09asking me to develop content for them.
05:11Amazing.
