00:00Rice is life for us Filipinos, and it's also seen in the way we embrace the traditional ways of using rice.
00:09Like the Korean Gimbap that we made when we visited Rodem Farm in Cavite.
00:14The Spanish dish, Paella, is also part of our taste buds.
00:18It was invented by the Savior of Pipay in Alba Restaurant in Quezon City,
00:22which has been serving traditional Spanish cuisine for more than 7 decades.
00:27My father actually started as a dishwasher in Spain.
00:31Before washing the leftovers, he would taste them,
00:34and once the kitchen was closed, he would try cooking it himself until he became a cook.
00:38After a couple of years that he trained the cooks and chefs of the Casino Español of Spanish Cuisine,
00:43he established his own small eatery.
00:45He studied our country first.
00:47He went to the market, he went to see what was available locally,
00:51and he adjusted his Spanish food to the palate of the Filipinos.
00:55For example, the Paella.
00:57So what my father did was he made sure that he fills up the Paellera at least a little to the edge,
01:03and then he filled it up with a lot of things going on.
01:06There's chicken, fish, chorizo, vegetables.
01:09That's how the Filipinos, he thought, would like the Paella, and it worked.
01:14Aside from Paella, Biryani is also one of the international dishes that Filipinos love.
01:20And one of them is AJ's trending Indian Biryani that you can find in the streets.
01:25Chicken Biryani, money back guarantee.
01:28Chicken Biryani is more delicious.
01:30160 pesos.
01:35Thank you very much.
01:37Egyptian Biryani, rigid, mushy rice, 100 percent.
01:41All the ingredients from Arab country, the quality number one.
01:46I cook my Biryani my own way.
01:49It's different from any kind of Biryani you eat.
01:53Even though his favorite actor is Andrzej Anson, Biryani is a hit.
01:58Especially because it's one of the specialties that his mom cooks.
02:02I tried making my own version, and I sometimes visit them at their house.
02:08We're basically doing one of the critical steps in making Biryani.
02:13It's the washing and soaking of the rice.
02:17So we're using here aged basmati rice.
02:20And then we'll just soak this for at least 30 minutes.
02:25And then we can start the other process.
02:28For the chicken, I'll just add lemon juice.
02:34Then I'll add yogurt.
02:36And then of course, salt.
02:38We have here garam masala.
02:40We'll also add chili powder.
02:43And of course, pepper.
02:46And then, we'll just mix it.
02:51Give it a nice massage, brother.
03:02I'll just add in our spices.
03:06We'll just add one more.
03:08So that our oil will be more fragrant.
03:18Skin side down.
03:23And then we'll just add in our onions.
03:29And then, our ginger paste.
03:32And then, our ginger paste.
03:39We'll just follow the layer of rice.
03:50And then our chopped cilantro and mint.
03:53Then after that, we'll just add a generous amount of crispy onions.
04:02And of course, a generous amount of crispy onions and our chopped herbs.
04:10And of course, what makes our dish more expensive, as you said, Andrzej.
04:15Our saffron milk.
04:23So let's add our chicken.
04:26So let's add water.
04:32So we'll cook this on high heat for more or less the first 15 minutes.
04:44That looks like a promising biryani.
04:48That looks like a promising biryani.
04:56It smells good.
04:57So at least the aroma is good.
05:05Taste it.
05:07You can taste it.
05:12Here it is.
05:13The moment we've been waiting for.
05:16Please, you go on.
05:19You're the most delicious chicken biryani I've ever tasted.
05:22So I hope you can taste it.
05:26It smells good.
05:27The spices, in India, the aroma is really special.
05:35And the flavor too.
05:37You know that this is an authentic biryani.
05:39For the first timer, this is 8.5 over 10.
05:45It's really good.
05:47Thank you, thank you.
05:53Rice is important for us Filipinos.
05:56More than making every food experience delicious,
05:59the deeper love we have for rice,
06:02will make us have a good character as Filipinos.
06:07How we value our history and culture,
06:10how we are fortunate,
06:13how practical we are,
06:15and how open our minds and hearts are
06:19for things that will make us richer.
06:23For us Filipinos,
06:25rice is not life.
06:28It's more like rice is love.
