Ingredients (for 1 cake pan, 18cm):
120g sugar-free salted caramel chocolate
3 whole eggs
120g cream cheese (I used a protein version)
Instructions:
Melt the chocolate in a double boiler and set aside.
Separate the egg yolks from the whites, and whip the whites until stiff peaks form.
In a bowl, mix the chocolate with the cream cheese, then add the egg yolks.
Gradually fold in the whipped egg whites: mix in the first part quickly and then fold in the rest slowly, mixing from bottom to top.
⚠️ If you use a larger cake pan, you'll need to double or triple the ingredients!
Pour the mixture into the cake pan and bake in a preheated static oven. Place a tray with water in the oven to create the right humidity. Bake at 170°C (338°F) for 20 minutes, then lower to 160°C (320°F) for another 20 minutes. Turn off the oven and leave the cake inside for an additional 15 minutes.
Let it cool; after the required time, this chocolate delight will be ready to serve!
