00:00If you're Southern, I know you've had fried potatoes and onions, but I want to know if you've had them like this.
00:05Now, even though fried potatoes and onions are a classic, old-school Southern side dish,
00:09not every Southerner makes them the same way.
00:12But isn't that the best part about Southern cooking?
00:14My mama, when I was growing up, did not use butter and oil like a lot of recipes out there.
00:19She used bacon grease.
00:21Big ol' glob, straight into the skillet.
00:24Once all your bacon grease is melted, add your potatoes.
00:26Toss them to coat them completely in the bacon grease and let them cook for about five minutes
00:30before you add in your onion, some salt, garlic powder, and pepper.
00:34Then you're just going to let them cook.
00:36You're going to want to keep an eye on the heat level so that they don't burn.
00:40You're wanting them to get crispy.
00:42These are looking perfect.
