Indulge in the refreshing burst of flavors with Limli Ki Khathi Meethi Chutney, a perfect accompaniment to your Iftar spread during Ramadan. This tangy-sweet chutney combines the zest of fresh lime with the rich sweetness of jaggery, balanced by aromatic spices like cumin and black salt. Ingredients :

-Imli 500 grams ( tamarind )
-Gur 450 Grams ( Jaggery )
-Khajoor 10 -15 ( Dates )
-Saunf 1 tsp ( Fennel Seeds )
-Zeera 1 tsp ( Cumin Seeds )
-Sabut Kali Mirch 1 tsp ( Whole Black pepper )
-Kala Namak 1/2 tsp ( Black Salt )
-Namak 1 tsp ( Salt )
-Lal Mirch Powder 1 tsp ( Red chili Powder )
-Kashmiri Lal Mirch 1 tsp ( Kashmiri Red Chili Powder )
-Adrak Powder 1 tsp ( Ginger Powder )
-Vinegar 1 tbsp ( Sirka )
-Melon Seeds 1 tbsp or as required


Direction For Cooking :

-Soak the tamarind ( Imli ) in 2 cup of water for 2 -3 hours.
-Remove the seeds of tamarind and strain set aside.
-Take dates remove the seeds wash them properly then soak them in warm water for 15 mins.
-Take a frying pan add fennel seeds , cumin seeds , black pepper fry them until fragrance starts on low flame , transfer to any dish and set aside.
-Take a wok add jaggery and water and cook until jaggery dissolve properly turn off the flame and let it cool for for 5 mins.
-Take a blender add fry spices and grind well set aside.
-In same jar add soaked dates and make a smooth paste.
-Strain the jaggery liquid through thin cloth.
-Take a wok add jaggery liquid add dates paste and cook for 2 -3 mins on medium flame.
-Now add tamarind pulp and cook for 5 mins on medium flame.
-Now add salt , black salt , red chili powder , kashmiri red chili powder , ginger powder mix well and cook for 2 -3 mins.
-Cook the chutney until desired thickness stir in between.
-Let it cool.
-Take melon seeds as required
-Your imli ki khatti meethi chutney is ready.
