Ingredients:
For Marination
1 Onion, chopped
5 garlic, cloves
1 cup Yogurt
1 tsp Turmeric powder
1 tsp Garam Masala
For Spice Mix
1 tbsp Cumin seed powder
1 tbsp Coriander seed powder
1 tbsp Kashmiri Red Chilli powder
Water as required
For Mutton Curry
1 kg Marinated Mutton
1/2 cup Mustard oil
3 Bay leaves
2 inch Cinnamon stick
1 Whole Black Cardamom
4 Dry Red Chillies
10 Cloves
10 Green Cardamoms
5 Onions, sliced
1 tbsp Ginger paste
1 tbsp Garlic paste
5 Green Chillies, grounded
Spice Mix
1 cup Yogurt
1 tsp Sugar
Salt to taste
4 Green Chillies, slit
1 ltr Water
1 tsp Ghee
Method of preparation:
Marinate the mutton for few hours.
Prepare the spice mix.
Heat oil in a vessel, add bay leaves, cinnamon stick, black cardamom, red chillies, cloves, green cardamoms, onions, fry it till its nice and brown.
Add ginger paste, garlic paste, green chillies, saute it till the raw smell goes off.
Add the spice mix, marinated mutton, yogurt and fry it on high flame.
Add sugar, salt, green chillies, water and mix well.
Cover it and cook it on medium flame.
Add ghee, mix well and our Kosha Mangsho is ready.
