Learn how to make Dahi Bhindi at home with Chef Seema on Swaad Anusaar.

Dahi Bhindi Recipe (Dahi wali bhindi) – Another easy to make bhindi recipe that goes well with phulka roti or paratha. Here okra is stir-fried first, so they are not slimy anymore and becomes soft and tender. Then mixed into the medium spicy, tangy yogurt-based thick gravy.
The yogurt here makes the gravy slightly tangy and creamy. Whether it’s summer or winter, we use yogurt aka curd or Dahi all day every day. But it is beneficial to consume during the summer months because of its cooling properties.
Dahi Wali Bhindi is the perfect recipe for the summer, as it will cool down effectively, it goes perfectly with Phulka Roti and Paratha.

Ingredients:
Ghee
250 gms Lady Finger (chopped)
Salt
Asafoetida
1/2 tsp Fenugreek Seeds
1/2 tsp Mustard Seeds
1 tbsp Cumin Seeds
Green Chillies (chopped)
Curry Leaves
1 tbsp Ginger (chopped)
1 tbsp Garlic (chopped)
1 Onion (chopped)
1 Tomato (chopped)
1/2 tsp Salt
1/2 tsp Red Chilli Powder
Turmeric Powder
Water
1 tbsp Coriander Powder
1 tbsp Cumin Seed Powder
Coriander Leaves (chopped)
2 tbsp Gram Flour
1 cup Curd
1 cup Water
Garam Masala Powder
Coriander Leaves (chopped)

Method: Let's start with heating up the Ghee, then add Lady Finger (chopped), Salt. Next, cook it till the color of Ladyfinger is changed, then take it out in the plate. Next add more Ghee in the same Kadai and add Asafoetida, Fenugreek Seeds, Mustard Seeds, Cumin Seeds, Green Chillies (chopped), Curry Leaves, Ginger (chopped), Garlic (chopped), Onion (chopped), Tomato (chopped), Salt, Red Chilli Powder, Turmeric Powder, Water, Coriander Powder, Cumin Seed Powder, Coriander Leaves (chopped)
mix it all together properly then add Gram Flour, Curd, Water mix in the curd bowl. Next add Lady Finger (Bhindi), Garam Masala Powder, Coriander Leaves (chopped).
Next, let it cook for 2-3 minutes and then take it out in a serving bowl and your Dahi Bhindi is ready to serve.
