Learn how to make Kaddu Ki Sabzi At Home With Rajshri Food

Ingredients:
1/2 kg of Kaddu or Pumpkin
For Panch Phoran Masala:
¼ tsp Fennel Seeds
¼ tsp Fenugreek seeds
¼ tsp Mustard Seeds
¼ tsp Cumin Seeds
¼ tsp Nigella seeds (Kalonji)
For Kaddu Sabzi:
3 tbsp Mustard Oil
1 tbsp Panch Phoran masala
1 pinch of Asafoetida
3 Dried Red Chillies
1 tsp Ginger (grated)
2 Green Chillies (chopped)
1/2 tsp of Turmeric Powder
1 tsp Kashmiri Red Chilli Powder
1 tsp Salt
Add soaked Kaddu
½ cup Water
1/2 tsp Garam Masala
1 tsp Dry Mango Powder
2 tsp Jaggery Powder
1/4 cup Water
Coriander Leaves (for garnish)

00:00 Most people don't like this sabzi.
00:02 But today, I'm going to show you how you can make your Kaddu ki Sabzi delicious.
00:09 Let's get started.
00:10 To begin, I have half a kg of Kaddu or Pumpkin here.
00:20 I'm scooping out the seeds and the pulp from the centre.
00:24 Instead of throwing them away,
00:26 you can dry and roast these seeds and have them as they are nutritious and healthy.
00:32 I'm chopping this into medium sized pieces.
00:38 Here's a tip, if you want the Kaddu to cook well, then use a soft one.
00:45 But if you're using a ripened one, then make sure to peel the hard skin.
00:51 Add some water and let the Kaddu soak in it.
00:55 Here, we'll use Panch Foran Masala, which is a blend of 5 spices,
01:04 and has a mild and versatile taste.
01:07 Mix 1/4 tsp each of Saunf, Methi seeds, Rai, and Cumin seeds.
01:16 And it's done.
01:18 Heat up a Kadhai and add 3 tbsp of Mustard Oil.
01:23 Use 1 tsp of the Panch Foran Masala.
01:26 1 pinch of Hing.
01:28 3 Dried Red Chillies.
01:30 1 tsp of Grated Ginger.
01:33 2 Chopped Green Chillies.
01:35 1/2 tsp of Haldi.
01:37 1/2 tsp of Cumin.
01:39 1/2 tsp of Turmeric.
01:42 1/2 tsp of Salt.
01:44 1 tsp of Haldi.
01:46 1 tsp of Kashmiri Lal Mich Powder.
01:49 Mix this.
01:51 Then add the soaked Kaddu.
01:55 Stir this well and let all the spices bind well with the Kaddu.
02:05 Add 1 tsp of Salt.
02:08 1/2 a cup of Water.
02:12 Stir this well.
02:14 Cover it and let it cook.
02:16 I constantly hear people say, Kaddu ki Sabzi is bland.
02:23 It's not tasty.
02:25 But what you can do is add a little bit of Garam Masala,
02:28 Amchoor Powder, and Jaggery Powder to give it a chatpata flavour.
02:34 Now let's add some Water.
02:43 And again cover and cook for a few more minutes.
02:47 Our Kaddu ki Sabzi is ready.
02:58 Remove it in a serving bowl and top it off with chopped Coriander Leaves.
