00:00 I thought I didn't like tomato pie,
00:02 but this one changed my mind.
00:05 I know, I know, not liking tomato pie.
00:08 Am I even a southerner?
00:09 While some of y'all might question my southerness
00:11 from time to time, I promise,
00:13 I grew up pretty much as southern as it gets.
00:15 I didn't love tomato pie before
00:17 because most of the versions I've had
00:19 were soggy and flavorless.
00:21 This tomato pie, though, is definitely anything but that.
00:24 The tomatoes are salted ahead of time,
00:26 which helps draw out some of that moisture,
00:28 and some of them are even pre-roasted
00:29 to dry them out even more.
00:31 We layer them up with a bacon, cheese, and mayonnaise
00:33 mixture and bake it inside of a Parmesan pie crust.
00:36 And let me tell y'all, one bite of this tomato pie
00:39 had me totally rethinking everything
00:42 I've ever said about tomato pie before
00:44 because it was utter perfection.
00:46 It should be the standard for all tomato pies.
00:49 And while I might not be a fan of all of them,
00:52 I think my southerness is still intact
00:55 because I sure do love this one.
