00:06 and it also kind of signals that the year is almost coming to a wrap.
00:09 Today, let's make a very special delicacy.
00:12 I am doing Gulab Jamun Cheesecake.
00:16 Surprised? Well don't be, let's begin.
00:18 Let's begin with Cream Cheese.
00:24 This is of course a nice creamy soft cheese.
00:29 Let's whip this up and ensure this becomes nice and light.
00:31 Time to add in Condensed Milk.
00:36 Bring it all back to the centre of the bowl.
00:43 And continue whipping.
00:45 Time to add in Thick Cream.
00:48 Let's churn this yet again.
00:57 Precisely 30 seconds after adding the cream,
00:59 our whipping should stop,
01:02 because with this, our cheesecake mix is literally done and ready.
01:05 Didn't I say? Don't be surprised,
01:07 this is possibly one of the simplest desserts that you can rustle up,
01:10 actually in a couple of minutes.
01:12 All you need is a couple of core ingredients and that's about it.
01:15 Let's scrape the sides.
01:16 Push it all back to the centre.
01:19 There's just one thing that you need to remember
01:21 while making the cheesecake mixture that I just showed you.
01:24 Ensure that you do not over whip this,
01:26 because if the cream gets over whipped in this mixture,
01:29 it'll immediately convert into butter.
01:31 So you stop right at 30 seconds, remember that?
01:34 Let's now begin the assembly.
01:36 Let's begin with crushed biscuit.
01:38 This is any neutral biscuit that you can choose.
01:41 Well I've deliberately kept this nice and gritty,
01:46 so that you also get a bite while having the cheesecake.
01:48 On the biscuit crumbs, let's add in a tablespoon of the Gulab Jamun syrup,
01:53 just to ensure that the biscuit becomes nice moist sand like.
01:57 Next, let's place in Gulab Jamuns.
02:00 The next thing that goes in is the cheesecake mix.
02:09 Now if you realise and notice, this is quite runny.
02:12 You need a setting agent to kind of set all of this beautifully in a glass.
02:17 Now you can use various setting agents.
02:19 If you're baking the cheesecake of course,
02:21 you add in things like corn starch and starches.
02:24 But in this case, I'm using China grass or Agar-Agar,
02:28 which is extremely important in this case,
02:30 because you need it to be set nice and just about wobbly.
02:34 So what I'm doing is, I'm actually taking the mixture of cheesecake,
02:38 and adding it in the China grass, which is at this stage warm.
02:42 So what you need to do is, take China grass,
02:45 add in a little bit of water,
02:46 and either microwave this or heat this on direct flame.
02:49 And then, in this hot mixture, you add in the cheesecake mixture,
02:53 because the whole idea is to ensure that the temperature of both the mixtures is the same.
02:59 This cannot be extremely hot and this cannot be extremely cold.
03:02 It just has to be neutral and equal.
03:04 So you mix this at this stage, and you add this into the cheesecake mix.
03:11 Once the assembly is done and ready, the next step is to ensure this gets nice and chilled.
03:15 And in the whole process of chilling, this is also going to set beautifully,
03:19 because of the China grass.
03:21 Let's allow it some time.
03:22 Our Gulab Jamun Cheesecake, well set, well settled, nice and chilled.
