Ingredients:
1 tbsp Oil
1 tsp Garlic Paste
3 Tomatoes (boiled & pureed)
1 tbsp Chilli Sauce
1 tbsp Ketchup
½ tsp Red Chilli Flakes
A pinch of Sugar
½ tsp Dried Oregano
Salt (as per taste)
2 tbsp Water
Coriander Leaves (chopped)
2 cups Spinach Leaves (chopped)
1 cup Fenugreek Leaves (chopped)
2 tbsp Gram Flour
1 cup Corn (blended into paste)
1 tbsp Gram Flour
½ cup Mint Leaves (chopped)
1 Tomato (deseeded & chopped)
4 Green Chilies (chopped)
1 tbsp Ginger Paste
½ tsp Red Chili Powder
¼ tsp Turmeric Powder
½ tsp Cumin Powder
½ tsp Garam Masala Powder
½ tsp Chaat Masala
A pinch of Sugar
2 Potatoes (boiled & grated)
Salt (as per taste)
½ Lemon Juice
Oil (for greasing)
Chaat Masala (for garnish)

00:05 Just like today's recipe.
00:07 Which is Methi Corn Seekh Kebab with a Tangy Tomato Chutney.
00:11 So let's see how.
00:12 First I am going to start with making the Tomato Chutney.
00:14 Heat a tbsp of Oil.
00:16 Once the Oil is hot, let's add in some Garlic Paste.
00:20 Saute it for a few seconds.
00:22 Add in the Tomato Puree.
00:24 For that I have taken 3 Tomatoes boiled and pureed them.
00:29 The Tomatoes have reduced to half their quantity.
00:32 And now I am going to add in a tbsp of Chilli Sauce.
00:36 A tbsp of Ketchup.
00:38 1/2 a tsp of Red Chilli Flakes.
00:40 A big pinch of Sugar.
00:42 1/2 a tsp of Oregano.
00:44 Salt to taste.
00:46 Mix all these ingredients and let them cook for around 2 minutes.
00:51 Let's add in 2 tbsp of Water.
00:54 Let it cook.
00:57 Turn off the flame.
00:58 Just add in a little bit of Coriander Leaves.
01:01 Let this cool down completely.
01:05 Time to make the Seekh Kebab.
01:07 For that I have taken 2 cups of Spinach.
01:09 1 cup of Methi or Fenugreek Leaves.
01:12 And chop them finely.
01:14 And now I am going to dry roast them.
01:16 Cook it till they dry out completely.
01:24 Once the leaves dry out, add in 2 tbsp of Gram Flour.
01:29 Roast it for a minute.
01:31 The leaves have completely dried out.
01:37 And let's remove it in a bowl.
01:39 And cool them down.
01:41 In the same pan, I am going to add in 1 cup Corn that I have churned into a paste.
01:46 Cook the Corn till it dries out.
01:50 Once the Corn starts to dry out, in this as well,
01:54 I am going to add in a tbsp of Gram Flour.
01:57 Mix well.
01:59 And cook till it dries out.
02:01 Spread this mixture in the hot pan.
02:05 And let it cool down completely.
02:07 While the Corn mixture is cooling down,
02:09 Let's add in a few ingredients in our Spinach and Methi Leaves.
02:13 Add in 1/2 a cup of chopped Mint Leaves.
02:16 1 Tomato.
02:17 1/2 a cup of Chopped Cilantro.
02:19 1/2 a cup of Chopped Coriander Leaves.
02:21 1 Tomato, deseeded and finely chopped.
02:25 And make sure you squeeze out all the water.
02:27 4 Green Chillies, finely chopped.
02:29 A tbsp of Ginger Paste.
02:32 1/2 a tsp of Red Chilli Powder.
02:34 1/4 tsp of Turmeric Powder.
02:37 1/2 a tsp of Cumin Seed Powder.
02:40 1/2 a tsp of Garam Masala Powder.
02:42 1/2 a tsp of Chaat Masala.
02:44 A big pinch of Sugar.
02:47 And let's add in the Corn.
02:49 Make sure it's completely cooled down.
02:52 Salt to taste.
02:54 1/2 a lemon juice.
02:56 Mix all these ingredients together.
02:58 And if you feel the mixture is too moist,
03:02 You can add in a little more of the Gram Flour or Corn Flour.
03:05 Apply a little bit of Oil onto your hands.
03:09 And I have some Kebab Skewers here.
03:12 They are square.
03:13 Take a little bit of the mixture.
03:16 And start pressing it on the skewer.
03:18 Keep spreading it very carefully.
03:22 Make sure the entire skewer is wrapped with the mixture.
03:26 Just place it over a bowl.
03:29 Till we make a few more.
03:31 Time to grill these Seekh Kebabs.
03:36 Now there are 2-3 ways of doing it.
03:38 You can even grill them on a sandwich griller.
03:41 Or if you have a skillet, you can do it on the flame.
03:44 But what I am going to do is the best way of doing it is directly on the flame.
03:48 So let's turn on the flame.
03:50 Take the Kebab Skewer and directly grill it on the flame.
03:55 Be very careful with your hands.
03:57 You need to cook them till you get a nice charred outer covering.
04:01 Keep rotating them.
04:03 Once it's slightly charred, let's place it back onto the bowl.
04:08 And let it cool down for a few seconds.
04:10 In this way, let's grill all the Kebabs.
04:14 How to cut these Kebabs?
04:20 Do not try and remove the entire Kebab from the skewer.
04:24 It will break.
04:25 Just take a knife and place cuts all around.
04:29 And very carefully remove each piece.
04:33 You can make these Seekh Kebabs in advance.
04:40 And all you need to do before serving is warm them up in a pan.
04:44 Or just microwave for 20 seconds.
04:46 Serve them piping hot and enjoy it with your family and friends.
