1 cup sabudana (साबूदाना)
2 medium-sized boiled potatoes (उबला हुआ आलू )
1/4 cup roasted peanuts powder (मूंगफली पाउडर )
4 green chilies (finely chopped) (हरी मिर्च)
1 tsp Ginger and green chilli paste ( अदरक -हरी मिर्च paste)
2 tsp Barnyard millet flour / Sama aata ( समा आटा )
1 tsp lemon juice (नींबू का रस )
Rock salt (sendha namak) according to taste ( सेंधा नमक )
Fresh coriander leaves (chopped) (हरा धनिया )
groundnut oil ( मूंगफली का तेल ) for frying
Water ( पानी )

Coriander (हरा धनिया )
Green chilli (हरी मिर्च)
Ginger (अदरक )
roasted peanuts (मूंगफली पाउडर )
lemon juice (नींबू का रस )
Rock salt ( सेंधा नमक )
:
1. Soak the sabudana in water for 4-5 hours or overnight. Drain well.
2. In a mixing bowl, mash the boiled potatoes.
3. Add soaked sabudana, ground peanuts, green chilies, lemon juice, rock 4. 5. salt, and chopped coriander to the bowl.
6. Mix everything well to form a dough.
7. Divide the mixture into small portions and shape them into cutlets.
8. Heat oil in a pan and shallow fry the cutlets until golden brown and crispy.
9. Serve hot with vrat-friendly chutney or yogurt.
