00:00 In winters, we all eat leafy vegetables and no one likes mustard leaves.
00:06 So today we are going to make radish and spinach saag.
00:09 I am Chef Nikki, let's make it.
00:12 Here we will use radish leaves to make saag.
00:18 I need 200 gm leaves.
00:20 We will take half spinach according to that.
00:23 If you want, you can keep the proportion of spinach and radish the same.
00:28 We will remove the stem of the radish and take the green part.
00:34 Because it is very hard.
00:36 In this way, we will separate all the leaves from the stem.
00:41 To make mustard saag, like we use bathua, you can add bathua to this saag.
00:51 Now to cook this, first we will take a pressure cooker.
00:56 Here we have taken 200 gm radish leaves.
00:59 Along with this, half quantity of spinach will go.
01:03 If you want, you can chop the radish leaves.
01:07 Now to this, 2 to 3 garlic cloves will go.
01:11 Along with this, ginger and one green chilli will be added.
01:17 Add 1/4 cup water.
01:22 Now close the pressure cooker and cook it till 3 whistles.
01:26 3 whistles of the pressure cooker are left.
01:33 I have closed the pressure cooker.
01:35 Now 1 minute is over, now we will open it.
01:38 Radish and spinach leaves are cooked very well.
01:45 Now we will let it cool and then take it in the grinder jar.
01:50 The leaves have cooled down, now we will take it in the mixer grinder.
01:54 Now to this, we will add 1/4 cup corn flour.
02:02 Here we have to keep in mind that we have to grind the mixture coarsely.
02:07 We don't have to make a fine paste.
02:09 You can see the consistency of it.
02:12 Now we will make saag.
02:15 First of all, we will take a pan and add 3 spoons of ghee to it.
02:19 And to this, we will add finely chopped garlic, finely chopped ginger and finely chopped green chilli.
02:26 We will roast it for 1 minute.
02:29 Now to this, we will add 1 finely chopped onion.
02:37 We will cook it till it turns golden brown.
02:47 Onion is roasted, now we will add spices to it.
02:50 1 tsp kashmiri red chilli powder, 1/2 tsp garam masala, salt as per taste.
02:56 We will roast the spices very well with the onion.
03:00 We will add 2 finely chopped tomatoes.
03:06 We will cover the pan and cook till the tomatoes are cooked.
03:14 We will add the saag to it.
03:15 Tomatoes are cooked well and you can see that the ghee has also come to the top.
03:24 Now to this, we will add saag.
03:27 Now to this, we will add a little water.
03:38 And we will leave the mixture to cook on a low flame for 10-15 minutes.
03:43 We will cover the pan and cook it for 15 minutes.
03:45 In 15 minutes, my saag will be ready.
03:55 Now we will serve it with butter and paratha.
