Ingredients:
.All-purpose flour: (maida)1 kg
.Oil: (TAL)1kg
.Potato: (AALO) 1kg
.Yellow split peas: (chany ki dal) 1cup
.Salt: (NAMAK) ½ tblsp
.red chili whole: (lal mirch sabit) 12-15
.mustard seed: (raai) ½ tsp
.turmeric :(haldi) ½ tsp
.red chili pwd: (lal mirch pwd) ½ tsp
.black caraway: (kalonji) ½ tsp
.fenugreek seed: (methi dana) ¼ tsp
.cumin: (zeera)½ tsp
.cloves: (long) 3-4
.black pepper: (kali mirch)8-10
.cinnamon: (dar.chini)2” inch long
Method:
Step: 1 (boil chana dal)
Sb sy phly ak pot my chany ki dal dalyn or pani 2 cup pani dal k boil karny py rakhyn.
Ab is my red chili whole(sabit lal mirch) 3 aadat, zeera daly thora sa.
Ab is 2 longy,3 black pepper or salt ¼ tsp dalyn.
Ab dal ko halki aanch(flame) py pakayn.
Jb dal gal jy to is ka pani puri tarha sy jaazb kar lyn or dal ko pis lyn.
Step: 2 (kachori ki dough)
Ak bowl lyn is my maida(all-purpose flour) dalyn.
Ab is my namak(salt) 1-½ tsp dalyn or is my oil/ghee dalyn about4-5 tblsp or mix karyn.
Ab is mixture ko pani ki madat sy gundh ly or roti k aanty sy thori hard dough gundhy gi.
Ab isy 1hour k liya rest py chor dyn.
Step: 3(aalo ki tarkari)
Ab ak pot my aalo lyn or is my 1litter pani dalyn.
Ab is my salt ½ tblsp,haldi,lal mirach 8-10,pisi lal mirach ½ tsp,longy,kali mirchyn,dar-chini,zeera
Rrai,kalonji or methi dana dalyn or pakny chor dyn about 30-45 minutes.
Jb aalo gal jyn to is ka pani half hony tak pakkyn.
Ab tarkari k aalo ko aachi tarhan mash karyn.
Now your tarkari is ready…
Step:4(filling and frying kachori)
Ab kachori ki dough ko ki goliyan banyn.
Ab in balls ko finger ki madad sy dabayn or is my dry chany ki dal fill karyn
Ab isy charo tarf sy pack kar dyn or isy pack ball ki dusari janib sy press karyn.
Or isy hath ki madad sy gol or chapta kar lyn.
Ab ak karhai my oil dal k garam karyn or taiyar kachori ko is my dal k golden hony tak fry karyn.
Ak ak kar k tamam kachoriyon ko is hi tarhan fry karlyn.
