INGREDIENTS

⭐ Boneless beef Boti ½ kg
⭐ Ginger Garlic paste 1 tbs
⭐ Green Chilli Paste 1 tbsp

⭐ Yogurt 1/4 cup
⭐ Mustard Oil 2 tbs
⭐ Fried Onion and crushed 2 tbs

⭐ Star anise 1/4tsp
⭐ Papaya 1tbsp or Meat Tenderizer 1/2 tbs
⭐ Salt 1 tsp or to taste

⭐ Red Chilli Powder 1/2tbsp or to taste
⭐ Nutmeg & Mace ¼ tsp
⭐ Whole Spice Powder ½ tsp

⭐ Roasted Cumin 1tsp
⭐ Poppy Seeds Roasted 1 tbsp
Black pepper 1/2tsp (KALI MIRCH)


For paratha

⭐Atta (Flour) 3 Cups
⭐Namak (Salt) 1 tsp or to taste
⭐Oil/Ghee 1-2tbs
⭐Pani (Water) as required


For Chutney

⭐1/2 bunch coriander
⭐4 green chilies
⭐1 onion

⭐1/2 bunch mint leaves
⭐1 tomato

⭐1 tbsp crushed red chili
⭐Salt to taste
⭐1/2 cup tamarind paste


METHOD IN URDU

⭐Bowl mein atta,namak aur oil dal ker mix ker lein. Pani dal ker dough ko ache tarhan ghond lein,dhak ker 15 minute kliya rakh dein.

⭐Haathon ko ghee sa grease ker lein aur small dough la ker ball bana lein,atta mein coat ker lein aur rolling pin ki madad sa dough ko bail lein.

⭐Oil laga ker upper sa atta chirak dein,cutter ki madad sa dough ko strips mein cut ker lein aur tamam strips ko ek saath fold ker lein,twist karein aur swiss roll ki tarhan roll ker lein aur edge ko join ker dein.

⭐Press ker ka atta mein coat ker lein aur rolling pin ki madad sa dough ko bail lein.
Tawa garam karein aur paratha ko dono sides sa ghee mein fry ker lein.

⭐Bowl main sab ajza ko mila ke saath main beef ki botiyan shamil kardein aur achi tarah mix karlein.

 ⭐2-3 hours ke liye chhor dein. Zada der chhor sakte hain naram botiyon ke liye.

 ⭐Botiyon ko skewers main laga kar grill ya BBQ karlein jab tak boti gal na jaye.

 ⭐Botiyon ko pan main bhi paka kar akhir main koyla ka bhaanp diya jasakta hai YA 20 min ke liye oven main bake bhi karsakte hain 180 degree pe.

⭐ Parathas aur Chutneys ke sath serve karein.


METHOD IN ENGLISH

⭐In bowl,add flour,salt,oil and mix.
Add water and knead well to form dough,cover and let it rest for 15 minutes.

⭐Grease your hands with ghee,take a small dough and make a ball,coat in dry flour and roll out dough with the help of rolling pin.

⭐Spread oil and sprinkle dry flour,cut dough into strips with the help of the cutter and fold all strips together, twist and roll it like a swiss roll and join the edge.

⭐Press and coat in dry flour and roll out dough with the help of rolling pin.
Heat griddle and fry paratha from both sides with ghee.

⭐In a bowl add boti and all other ingredients and mix well.

 ⭐Leave for 2-3 hours or more if want tenderer.

⭐ Adjust the Botis on Skewers and Grill or BBQ till meat is done.

⭐ You can also make them in pan and give a coal smoke in last OR you can bake them for 20-20 mins in oven @ 180 Degrees.

 ⭐Serve with Parathas, Chutneys and Salad.
