00:00 Hi guys, welcome back to my channel. Today I will show you how to make the Haitian
00:05 black mushroom rice, hui jiao jiao or hui ou champignon. The ingredient list will be in the description box below.
00:13 Jiao jiao are dried mushrooms that are usually found in Haiti. You can purchase them in local Haitian food stores or simply ask one of your family members to bring you some.
00:29 So what you need to do is to boil water, add your dried mushrooms and let it simmer for a couple of minutes.
00:36 You will then drain it and save the water to cook your rice.

01:14 In a pot on medium heat, you will add 1 tablespoon of olive oil, your Haitian spices. The recipe will be in the description box below.
01:23 You also add your peas, onions and mushrooms, fresh mushrooms. You cook them for a couple of minutes then you add your water.

01:43 Then you may add your seasonings. Here I'm using a vegetable seasoning and another dry spice mix.

01:53 While your vegetables are cooking, you may clean your rice. I rinse mine with water. This step is optional. You may skip it if you'd like to.

02:47 Add more seasoning if needed. I will then add 1 scratch bonnet pepper, thyme and garlic. This is optional. I added to flavor my rice but you may skip it if you'd like.

03:03 Cover then let it simmer for about 20 minutes.

03:13 At this point, lower your heat and let it cook covered for another 5 minutes.
