2 tbsp Biryani Masala
2 tbsp French Beans (chopped)
2 tbsp Peas
2 tbsp Green Capsicum (diced)
2 tbsp Carrot (diced)
2 tbsp Paneer (cubes)
Salt (as required)
1 cup Whipped Curd
2 cups Basmati Rice (soaked)
3 cups Water
1 tbsp Ghee
Coriander Leaves & Green Chilli (for garnish)

00:09 And I promised that I'll show you a recipe from this.
00:12 Today's recipe, ladies and gentlemen, is a Pressure Cooker Biryani.
00:16 The treatment of this recipe is exactly like how you would make a Biryani.
00:21 I'll bite, the whole process is going to happen in a pressure cooker.
00:25 It's as simple as that.
00:26 In a deep wok or a Kadhai or a pressure cooker for now,
00:31 I'm going to take Oil and then deep fry Onions.
00:34 Literally the way you'd make Barista.
00:36 Let's begin with Red Onions.
00:40 Once the Onions turn golden brown,
00:56 Time to add in the whole spices,
00:58 Bay Leaf, Cinnamon, Cloves, Green Cardamom.
01:01 Paste of Ginger-Garlic, Green Chillies.
01:04 Dried Fenugreek Leaves.
01:06 And give this a quick stir.
01:07 Once the raw flavour of the Ginger-Garlic kind of goes away.
01:11 Time to add in the star of this recipe,
01:14 Homemade Biryani Masala.

01:32 At this stage, you add in Turmeric Powder, Red Chilli Powder, Coriander Powder, Garam Masala Powder.

01:56 Fresh, frozen, choice is completely yours.

02:09 Time to add in Whipped Curd, preferably homemade.

02:19 Of course, you wash it once, twice over and soak it for 20 minutes.
02:22 Let's mix all of this well.
02:24 And now, comes in the real test of the Biryani.
02:28 How much water would you add in while pressure cooking a Biryani?
02:31 It's very simple.
02:32 For every cup of Raw Rice, we would be adding in 1 and a half cups of water.
02:37 Very simple.
02:38 So here, I have 2 cups of Raw Rice.
02:41 For that, I'm going to use 3 cups of water.
02:44 Simple.
02:45 Do not goof this up, because if you get this wrong,
02:48 you end up like a congee.
02:50 Simple.
02:51 Finally, just before the lid goes on,
03:06 Generous amount of Desi Ghee.
03:09 Finally, check for Salt.
03:11 And cover this.
03:12 On high flame, we cover this.
03:15 And we cook this under 3 whistles.
03:17 It's been 3 whistles and with this, off goes the flame.
03:24 Like I said, allow the steam in the pressure cooker to completely subside.
03:28 And after that, we'll serve.
03:30 The pressure has subsided, let's have a quick check.
