00:29Let me show you how you can continue to make the lasagna and all the other products you want to make
00:33without adding calories and without adding fat.
00:35The first kitchen cheat is actually for butter.
00:38We all love butter. You cook with it a lot?
00:41It gives the flavor to the food. It's nice and rich. It's good.
00:45You have to have butter.
00:46But I think you can cheat on your butter if you use canned pumpkin.
00:51This is a nutritional powerhouse.
00:53It is rich in potassium. It has iron in it.
00:55One cup has seven grams of fiber.
00:57I mean, this stuff is good.
00:58Wow.
00:59It does all the things you want it to do for you.
01:01It's easy to purchase, and it's reduced fat, and it's low in calories.
01:05And it keeps the moisture in all your recipes.
01:07Now, typically, I keep half the butter that you normally would use,
01:10and then you add and mix it.
01:12Instead of the other half of the butter, use the organic pumpkin.
01:13Same amount.
01:14If you mix those together, you'll get this creamy solution that is perfect to bake with,
01:18and you can actually make these kinds of products with it.
01:20So I have made these for you.
01:22These are my little muffins. I think you'll enjoy them.
01:24You can make pancakes with them. You can make cookies with them.
01:26Again, look for low-sodium pumpkin.
01:28Give it a taste.
01:30You'd never go to someone's house and not taste their muffins.

01:43Okay, the next secret we're going to talk about is an important kitchen cheat is for cream.

01:54All right, so for the fettuccine alfredo, I've got a little cheat for you.
01:57You're going to not think this is feasible, but this is the die for.
02:00Tofu.

02:03Now, before everyone starts rolling their eyes,
02:04and we say, oh, tofu, please, come on, cream.
02:06If you replace your cream with this tofu,
02:10you replace the saturated fat, you replace the calories,
02:12and that's normally found in the cream.
02:14And if you get silken tofu, which is this kind of tofu,
02:17if you look at this, guys, you see how it's sort of soft?
02:19It actually looks like it's cream a little bit.
02:21It's not the regular tofu.
02:22It's silken tofu, high in protein, low in fat.
02:24It may lower your cholesterol because of the fact that it's tofu.
02:27It's got phytoestrogens, and for that reason, it lowers the risk of heart disease.
02:30So I can give you a hundred different reasons why it's good,
02:32but you actually have to like the taste.
02:34So give this a taste, and I'm going to explain what it is.
02:36If you mix this up with other products, you can puree it in the soups and the sauces.
02:40It works in a mac and cheese, potato soups.
02:42This happens to be silken tofu tomato soup.
02:46And I don't like tomato soup.
02:47Oh, you don't?
02:48But this is really good.
02:49It's good, isn't it?
02:50Oh, I like it.
02:51It's a kind of one-to-one transition that you can make without anybody knowing it in your family.
02:55And you have cheated on your old-fashioned cream to make them healthier.
02:58No, it's really, really good.
03:00We use this a lot in my house.
03:01Silken tofu.
03:02Okay, next kitchen cheat is one for this sandwich calorie killer, which is mayonnaise.
03:07Just a little dot of mayonnaise.
03:09You put 80 calories on there half the time, right?
03:11A lot of fat, too.
03:12So what are you going to replace it with?
03:14Do you use a lot of mayo in your lunch sandwiches?
03:16Three kids, I have to make their lunches.
03:18I eat one myself, tuna fish.
03:20What do you think they would say if you came home and made them an avocado Greek yogurt power combo instead of the mayo?
03:27I want to try it.
03:28You want to try it?
03:29It looks really good, yeah.
03:30Here, you know what?
03:31This is what it looks like.
03:32Give that a taste.
03:33Remember, now these are both super creamy foods, so they give you the same texture as mayo normally has in it.
03:37If you combine half a cup of avocado with Greek yogurt 2% kind, you get a lot less of the saturated fats.
03:44You get a lot of the healthy fats.
03:46And most importantly, you just need a little dab of it to give you that exact same texture as mayo.
03:50I like the consistency because with them, they don't like to eat vegetables, but they love avocado and they like the yogurt.
03:57Oh, good.
03:58So that works good.
03:59Put some on this bread.
04:00Okay.
04:01She knows how to make food.
04:03This is perfect.
04:04Okay, now lick the knife.
04:07Didn't I teach you anything?
04:11Okay, just put it right there.
04:13My goodness.

04:16Take a small bite so you can continue to talk about the sandwich.

04:22Definitely.

04:28And the final cheat, and this is the cheat for one of the biggest problems we have, is sugar.
04:32You got to make sugar in everything.
04:34I want you to cheat on your sugar with banana puree.
04:39This is the simplest, easiest cheat of them all.
04:41You take a banana, you mash it up with a fork or you can put it in a blender, whatever you want to do.
04:46You replace half the sugar that's called for in the recipe.
04:49For example, if you need one cup of sweetener that you're supposed to use, you get half a cup of that sweetener or sugar,
04:54and use a half a cup of this banana puree.
04:56You mix it up.
04:57This is just a banana puree.
04:58When you mix it with the sugar, it adds fiber, it adds moisture, and it will take on the flavor of the fruit puree.
05:04So you get all the benefits.
05:05So we made these cookies with my recipe.
05:08Again, half of the sugar will be replaced with this banana puree.
05:11This, you can eat the whole cookie.
05:12Give me a taste.
05:13See what you think about it.
05:14But not the whole cookie, right?
05:15It's all yours.

05:17You can have two cookies.
