00:00 This is Grumpy Bagels, a cozy cafe on Jalan Imbi in Kuala Lumpur that specializes in,
00:07 you guessed it, bagels.
00:09 Since its opening in early April, what was once an abandoned bungalow now has hungry
00:15 customers at its doorstep from early in the morning, all eager to get their hands on this
00:20 American classic.
00:22 Owner Claire Tan developed a special fondness for this baked treat during her years working
00:28 as a flight attendant.
00:29 Back then when I was still flying, every time when I get roasted for a US flight, I'll definitely
00:34 go for bagels.
00:35 Even for breakfast, for lunch, bagels is always my top priority.
00:40 She says it's the texture that makes these bagels one of a kind.
00:44 For me, the best bagel has to be crispy on the outside and soft and chewy inside.
00:50 What makes our bagels different is the ingredients that we use and also the baking process.
00:55 It takes us two to three days to bake a bagel, so we use overnight proofing instead of baking
00:59 them directly to improve the dough flavor and also enhance the texture.
01:04 The most important part is boiling them before baking.
01:07 A lot of people will just skip this step, but for us, we insist to follow the most traditional
01:15 way of doing the bagels because we want to preserve the most authentic taste of the bagels.
01:21 Grumpy Bagels has nine sweet and savory bagels on its menu, including six types of bagel
01:28 sandwiches.
01:29 My favorite sweet bagel will be berry crumble.
01:32 We use our house-made strawberry jam and pair with berry-based bagels topped with butter
