Cumin Seeds - 1 tbsp
Fenugreek Seeds - 1 tbsp

Coriander Seeds - 1 tbsp
Mustard Oil - ¼ cup
Kashmiri Red Chilli Powder - 2 tbsp
1 juice of a Lemon

00:08 I am Chef Nikki and today we are going to make Winter Pickle.
00:12 Let's start.
00:13 Take 1/2 cup raw turmeric.
00:18 Add 1/2 cup red carrot.
00:22 Take 1/2 cup radish.
00:26 Take 1/4 cup green chilli.
00:30 Add 2 tbsp ginger garlic paste.
00:33 Add 2 tbsp salt.
00:36 Mix it well.
00:38 Cover it and let it rest for 1 hour.
00:48 Meanwhile let's make masala for pickle.
00:50 Take 1 tbsp cumin seeds.
00:52 Add 1 tbsp fenugreek seeds.
00:54 Add 1 tbsp fennel seeds.
00:56 Add 1 tbsp dry fenugreek seeds.
00:57 Add 1 tbsp coriander seeds.
01:01 Saute everything for 3-4 minutes.
01:06 Keep the flame low.
01:08 Keep stirring the masala continuously.
01:14 Masala is roasted well.
01:16 Let it cool down.
01:18 Masala has cooled down.
01:25 Now make a fine powder.
01:27 Masala is ready.
01:37 Now heat oil for pickle.
01:39 Heat 1/4 cup mustard oil.
01:42 Heat the oil well.
01:46 Turn off the flame and let it cool down.
01:53 Oil is hot now.
01:55 Keep it aside and let it cool down.
01:57 1 hour has passed.
02:01 Masala is marinated well with salt.
02:04 Add the masala we made for pickle.
02:09 Add 2 tbsp kashmiri red chilli powder.
02:15 Add 1 lemon juice.
02:17 Oil is cool now.
02:21 Add the pickle in the oil.
02:23 Mix it well.
02:29 If you want to keep it for long, add 2 tbsp vinegar.
02:35 You can also add fresh red chilli.
02:39 Our winter pickle is ready.
02:43 You can store it in an airtight container for 1-2 months.
