00:00It's a famous dish from Nueva Ecija that we tried.
00:05So let's find out how to cook it and satisfy our Tinumis craving here in San Upinon.
00:16In every corner of our country, there is a deep history and culture anchored here.
00:23A good example of this is Tinumis, a famous and popular dish in Nueva Ecija and its surroundings.
00:32This is their original version of Dinuguan.
00:35And to teach us how to cook it, we will be joined by Chef Warren Lagud here in Sarap, Pinoy.
00:47Let's start by cooking the Tinumis.
00:49Let's heat the oil. This is what the pork is frying.
00:53Let's add the ginger.
00:58And of course, we will just mix it so that the ginger's flavor will be absorbed.
01:01Then next is the onion.
01:09Let's also add the pork.
01:19Let's saute it until it softens.
01:25Then let's add the fish sauce.
01:29This is the fish sauce.
01:33Then next is the pepper.
01:41After that, let's add water so that the pork will soften.
01:47There.
01:49Let's boil it for about one minute so that the pork will soften.
01:56And for the sourness of our Tinumis, Chef Warren added the Sampaloc Seasoning Mix.
02:03Let's add the pork blood.
02:11Let's boil it for about two minutes so that the blood will be cooked.
02:17Let's add the pork liver.
02:24Let's boil it for about one minute so that the liver will be cooked.
02:30I can already smell the Sampaloc.
02:34Then let's add the chili green.
02:40Let's mix it.
02:41Then let's add the Chicharon that came from Kasim.
02:49I boiled it earlier and then I fried it.
02:52Let's add it.
02:54Then let's add the Cusbong.
02:57This is the Sampaloc Cusbong.
02:59I didn't mince it because it will be more flavorful.
03:02Let's mix it again.
03:04Let's boil it for about one minute so that it will be cooked.
03:08Then we can put it on a plate.
03:11Our Tinumis is now cooked.
03:18Let's garnish it with spring onion.
03:22Here's our Tinumis of Nueva Ecija.
03:41And that's our appetizing dish, Tinumis.
03:44In every bite, you will taste the unique flavor that it brings.
03:49Because each ingredient of Tinumis has its own meaning and gives a unique taste that reflects the history of our country.
