✍INGREDIENTS:

- 1 litre milk (1 लीटर दूध)
- 2 tablespoons vinegar (2 टेबलस्पून सिरका)
- 2 tablespoons water (2 टेबलस्पून पानी)
- 1 litre milk (1 लीटर दूध)
- 1/2 teaspoon cardamom powder (1/2 टीस्पून इलायची पाउडर)
- A few strands of saffron (or turmeric as an alternative) (केसर की कुछ पत्तियाँ या हल्दी)
- 1/2 cup sugar (1/2 कप चीनी)
- 1 cup sugar (1 कप चीनी)
- 4 cups water (4 कप पानी)
- 2 cardamom pods (crushed) (2 इलायची के फाले, कुचले हुए)
- 1 tablespoon cornflour (कॉर्नफ्लोर)
- Chopped almonds and pistachios for garnish (कटे हुए बादाम और पिस्ता)
-Cold water (ठंडा पानी)

Instructions : -

- Boil 1 litre milk and then remove from heat.
- Mix 2 tablespoons vinegar with 2 tablespoons water.
- Gradually add vinegar mixture to the milk and stir to curdle.
- Strain the curdled milk through a cloth and rinse with cold water.
- Press out excess water and let the chhena set for 30 minutes.
- Boil 1 litre milk, stirring continuously, until it thickens.
- Add 1/2 teaspoon cardamom powder and saffron (or turmeric) to the milk
- Stir in 1/2 cup sugar and simmer until the milk thickens further.
- Prepare sugar syrup by boiling 1 cup sugar with 4 cups water and 2 crushed cardamom pods.
- Mix 1 tablespoon cornflour with a little water and add to the thickened milk.
- Form chhena into balls and cook in boiling sugar syrup for 5 minutes.
- Transfer cooked balls to cold water and soak for 2 hours.
- Garnish ras with chopped almonds and pistachios.
- Place chhena balls in the ras and refrigerate for 2 hours before serving.

00:26To make Rasmalai, we will first take 1 litre of milk.
00:31So let's heat the milk.
00:35Friends, the milk is boiling.
00:38Now let's remove it from the flame.
00:41To separate the milk, we will take 2 tbsp of vinegar.
00:47Add 2 tbsp of water and mix it.
00:56We will add the vinegar little by little in the milk and mix it.

01:06Now we will sieve it with the help of a cloth.

01:16And we will squeeze it well and remove the water from it.

01:39And till then we will prepare the Ras for Rasmalai.
01:43To make Ras, we will first take 1 litre of milk.

02:04Now we will reduce the flame to medium.
02:07For aroma and taste, we will add 1 tsp of cardamom powder to it.

02:15And we will mix everything well.
02:18Friends, the colour of the milk will turn yellow due to the saffron thread.
02:22So if you don't have saffron thread, you can also add turmeric to it.

02:34Now we will add half a cup of sugar to it.
02:37You can increase or decrease the sweetness as per your taste.
02:42We will keep stirring it on medium flame till it comes to a boil.

02:58Now we will make sugar syrup without boiling it.
03:02To make sugar syrup, we will take 1 cup of sugar in a pan.
03:07And we will add 4 cups of water to it.
03:10We will mix the sugar with water and let it come to a boil on high flame.
03:19For taste, we will add 2 cardamoms to it.

03:31Our sugar syrup is ready.
03:33Now we will lower the flame.
03:36Now let's check the chhena.
03:40Let's take the chhena out of the pan.

03:48We will grind it in a mixer jar.

04:03Now we will add 1 tbsp of cornflour to it.
04:06And mix it well with chhena.
04:10You can also use arrowroot instead of cornflour.

05:18After flipping, we will cover it and cook it for another 5 minutes on high flame.
