✍INGREDIENTS:

- 2 cups all-purpose flour (मैदा)
- 2 tablespoons kasuri methi ( कसूरी मेथी)
- 1 teaspoon crushed ajwain (अजवाइन)
- 1 teaspoon salt ( नमक)
- 3 tablespoons oil or ghee (तेल या घी)
- Water (as needed for kneading) (आवश्यकतानुसार पानी)
- 1 cup soaked chana ( चना )
- 2 tablespoons oil (2 बड़े चम्मच तेल)
- 1 teaspoon cumin seeds ( जीरा)
- 1 teaspoon ginger, chopped ( अदरक, कटा हुआ)
- 5 cloves garlic, chopped (5 कलियाँ लहसुन)
- 5 green chilies, chopped (5 हरी मिर्च)
- Salt to taste (नमक स्वाद अनुसार)
- 1 teaspoon black pepper powder (काली मिर्च पाउडर)
- 5 boiled potatoes, cut into small pieces (5 उबले हुए आलू)
- 2 tablespoons oil (तेल)
- 1 teaspoon cumin seeds (जीरा)
- 1 large onion, chopped (1 बड़ी प्याज़)
- 1 chopped tomato (टमाटर)
- 1 tablespoon ginger-garlic paste ( अदरक-लहसुन का पेस्ट)
- 1 teaspoon coriander powder (धनिया पाउडर)
- 1 teaspoon cumin powder (जीरा पाउडर)
- 1 teaspoon amchur powder (अमचूर पाउडर)
- 1/2 teaspoon turmeric powder ( हल्दी पाउडर)
- 1/2 teaspoon black pepper powder (काली मिर्च पाउडर)
- 1 teaspoon garam masala (गरम मसाला)
- 1 teaspoon black salt ( काला नमक)
- 1 teaspoon regular salt (नमक)
- 1/2 tablespoon red chili powder (लाल मिर्च पाउडर)
- 1 tablespoon Kashmiri red chili powder ( कश्मीरी लाल मिर्च पाउडर)
- 1 tablespoon sugar (चीनी)
- Fresh coriander leaves (for garnish) (ताजे धनिया पत्ते, )

Instructions :

Step 1 : Mix 2 cups flour, 2 tbsp kasuri methi, 1 tsp ajwain, 1 tsp salt, and 3 tbsp oil. Gradually add water and knead into a smooth dough. Let it rest for 10 minutes.

Step 2 : Heat 2 tbsp oil, add 1 tsp cumin seeds, then 1 tsp ginger, 5 chopped garlic cloves, and 5 chopped chilies. Sauté until fragrant. Add soaked chana , cook for 4-5 minutes, and cool.

Step 3 : Heat 2 tbsp oil, add 1 tsp cumin seeds, 1 chopped onion, and cook until golden. Add 1 chopped tomato and 1 tbsp ginger-garlic paste. Cook until the tomato softens. Stir in spices and boiled potato pieces. Cook until thickened, then add sugar and coriander leaves.

Step 4 : Blend the cooled chana dal mixture to a coarse paste, mix in 1 tsp black pepper and 1 tsp salt.

Step 5 : Divide dough into balls, roll into circles, add a spoonful of filling, fold, seal, and flatten.

Step 6 : Heat oil and fry kachoris until golden and crisp on both sides. Drain on paper towels.
