Learn how to make Malwani Masala Powder - a multi purpose Indian spice commonly used in Malwani recipes from our chef Archana on Ruchkar Mejwani Basic Cooking. This masala can be used for all Malwani style Chicken, Mutton, Fish recipes.

Ingredients:

2 tbsp Oil
4 tbsp Coriander Seeds
2 tbsp Khus Khus
1 tbsp Dagad Phool
12 Teppal
1 tbps Funnel Seeds
1 tbsp Shahjeera
1 tsp Mustard Seeds
2 Masala Cardamom
2 Bay Leaves
1 tsp Turmeric Powder
1 Jaypatri
3 inch Cinnamon
1 tbsp Black Pepper
20 Cloves
30 Dry Red Chillies

Method:

- In a pan heat some oil.
- Add coriander seeds, khus khus, dagad phool, teppal, funnel seeds, shahjeera, mustard seeds, masala cardamom, bay leaves, turmeric powder, jaypatri, cinnamon, black pepper, cloves and dry red chillies.
- Roast everything well for few minutes.
- Keep the mixture side to cool down.
- Add the mixture to a mixer grinder and grind well to get a smooth powder.
- Malwani Masala is ready to be used.
