00:25 I'm using one and a half cup of puffed rice.
00:29 I'm adding it to an open pan,
00:30 which has been heating for the last five minutes.
00:34 We're going to roast the puffed rice
00:36 till it loses any moisture that is trapped inside it,
00:40 and it turns nice and crispy.
00:42 The puffed rice has a nice golden brown color.
00:50 Let's take it out into our bowl.
00:51 Let's make our bhaja masala.
00:56 Bhaja masala is nothing but roasted spices.
01:00 I'm using fennel seeds here today.
01:02 This is three teaspoons of fennel seeds,
01:05 three teaspoons of cumin seeds.
01:07 Roast it on low flame.
01:09 If you do this at low flame,
01:11 it will ensure that your spices don't burn
01:13 and let out their aroma slowly.
01:16 Now I'm going to add in five to six cardamom pods.
01:20 If you want to make it spicy,
01:21 you can also add dried red chilies here.
01:24 But because I'm using this for jhal muri today,
01:26 it already has a lot of green chili,
01:29 so I'm skipping on the red chilies.
01:31 This is three teaspoons of coriander seeds,
01:34 and we're going to toast it
01:36 till they catch a little bit of color.
01:38 The coriander seeds have caught on a little bit of color.
01:41 They smell amazing right now.
01:43 I'm going to switch off the flame
01:45 and cool down all of these spices.
01:47 Once they're cool,
01:48 I'm going to grind them into a fine powder.
01:52 And our bhaja masala will be ready.
01:55 Time to assemble our jhal muri.
01:57 I'm going to start by adding in,
01:59 you can use any type of farsan that you like.
02:02 Aloo bhujia.
02:06 This adds a nice minty flavor.
02:07 Chana jor garam.
02:10 This adds a nice tang to the jhal muri.
02:13 Next, I'm adding in some sprouted brown chana
02:16 and boiled white peas.
02:18 Half a cup again.
02:19 One potato that has been boiled and chopped.
02:22 One tomato that is finely chopped.
02:25 One finely chopped onion.
02:26 And now it's time to add all the flavorings.
02:30 Before we add in all the flavors,
02:32 let's mix all of our ingredients.
02:36 This already smells really good,
02:39 but the flavors are just going to do their magic
02:41 soon enough.
02:43 I'm adding in some crushed green chili,
02:45 black salt,
02:47 some fresh coconut for texture,
02:49 bhaja masala, around one tablespoon.
02:52 One teaspoon of mustard oil.
02:55 This is really important.
02:57 And this oil is the oil that floats on top of mango pickle.
03:01 This has a lot of flavor in it.
03:03 Adds a nice umami flavor to the jhal muri.
03:06 Let's mix all of our ingredients.
03:10 And lastly, I'm going to squeeze in half a lemon.

03:18 Serve this immediately.
03:24 I'm going to garnish it with lots of chopped coriander,
03:32 thin sevs,
03:33 and some chopped green chilies.
03:36 Our jhal muri is ready to serve.
