Ingredients:
To cook Mutton in Pressure Cooker:
1Kg Mutton
2 Glasses of Water
3 Tsp Ginger-Garlic Paste
Salt as per taste
For Green Masala Paste:
1 Bunch Coriander Leaves
4 Green Chillies
Little Mint Leaves
2-3 Tbsp Grated Coconut
Half Lemon Juice
For Curds Mixture:
4 Tbsp Curds
¼ Tsp Turmeric Powder
½ Tsp Garam Masala Powder
2 Tsp Coriander Seeds Powder
½ Tsp Cumin Powder
2 Tsp Fennel Seeds Powder
Other Ingredients:
2 Tsp Ghee
2” Cinnamon Stick
4-5 Cloves
2 Petals Star Anise
1 Chopped Onion
For Rice:
4 Cups Basmati Rice
For Raita:
Mix Curds, Boondi, Salt & Mixed Spices Powder
OR
Mix Curds, Boondi & Sugar
For Rice Preparation:
Wash the Basmati Rice & Soak it for 30 Minutes & then drain it.
Method of Cooking:
1. First add the cleaned Mutton in the Pressure Cooker, 2 Glasses of Water, 3 tsp Ginger-Garlic Paste & 2 tsp of Salt.
2. Mix all well & Pressure Cook for 3 Whistles.
3. Once the pressure has been released check for meat. Then separate soup from the meat.
4. Heat a vessel add 2 tsp Ghee, 2” Cinnamon Stick, 4-5 Cloves, 2 Petals Star Anise & 1 Chopped Onion & fry till onion becomes translucent.
5. Add the prepared Green Masala Paste & fry till oil separates.
6. Add the Curds Mixture & Mix well& let it cook for few minutes.
7. Add the cooked meat and give a good mix & close the lid & let it cook for few minutes.
8. Then add the drained Basmati Rice & gently stir the rice.
9. For 4 Cups of Basmati Rice, add 8 Cups = (4 Cups Soup + 4 Cups Water) & check for salt & close the lid & let it cook.
10. Once the rice has been cooked, just stir the rice upside down so that the rice at the bottom doesn’t over cook.
Your Yummy & Tasty Green Masala Mutton Pulao is ready. Serve Hot with your desired Raita.
