Recipe to prepare "Gaajar ka Halwa", a diabetic friendly Dessert:
Ingredients:
1. carrot (grated) - 1 kg
2. milk (low-fat) - 1 litre
3. clarified butter (ghee) - 2 table spoons
4. cardamom powder - 1 tea spoon (5-6 crushed cardamoms)
5. almonds (grated or julienned) - 8-10
6. chironji (charoli) - 1 tea spoon
7. muskmelon seeds (kharbuja beej) - 1 tea spoon
8. artificial sweetener - 1 tea spoon
Note: Those suffering from severe Diabetes; need not add any sweetener.
Procedure:
1. heat 2 table spoons clarified butter in a deep pan
2. add to it grated carrot (1 kg)
3. stir for 2-3 minutes
4. add low-fat milk (1 litre)
5. let it cook for approx. 15 minutes until the milk reduces
6. add cardamom powder (5-6 crushed cardamoms)
7. mix all the ingredients
8. cook until the dish gets a thick consistency
9. add dry fruits:
a. grated or julienned almonds (8-10)
b. 1 tea spoon chironji (charoli)
c. 1 tea spoon muskmelon seeds
10. blend all the ingredients
11. put off the flame
12. add 1 tea spoon artificial sweetener, and mix it
