00:10 Gajar is a seasonal vegetable

00:14 It is very tasty and good to make
00:17 and it is made with seasonal ingredients
00:20 So we have this seasonal vegetable
00:21 which is called Desi Gajar
00:24 We have peeled it
00:26 Now we will cut it
00:29 So let's start making Gajar ka Achar
00:31 Cut it like this
00:33 You can keep big pieces or small pieces
00:37 Cut it and put it in a bowl
00:41 Similarly cut the other Gajar
00:45 Now we have to take this bowl
00:49 and put vinegar in it
00:51 about 1 spoon
00:53 Put it and mix it
00:57 It is also a preservative
00:59 Gajar has a sweetness and vinegar has a sourness
01:01 So it gives a good flavor
01:03 After this add some salt
01:07 and along with salt
01:09 add a pinch of red chili
01:13 Now we have mixed it

01:17 Leave it aside for half an hour
01:19 Now we will prepare Gajar ka Achar Masala

01:39 onion seeds
01:41 red chili powder
01:43 black salt
01:45 turmeric
01:47 salt
01:49 asafoetida
01:51 mustard oil
01:53 or mustard oil
01:55 Keep the flame low
01:57 Dry roast all the spices on low flame

02:07 4 spoons
02:09 Let it roast for 30 seconds
02:15 After that add 3 spoons of coriander seeds

02:27 3 spoons of coriander seeds
02:31 1.5 spoons of fenugreek seeds

02:39 After that add 1 spoon of cumin seeds
02:45 and 1 spoon of kalonji
02:49 Roast it on low flame until you get the aroma
02:53 The color of the spices will also change
02:58 Roast it for 2 to 3 minutes

03:06 Now wait for it to cool down

03:18 Add 1/2 spoon of black salt

04:41 Add 8 spoons of mustard
04:45 The ratio of mustard is more
04:48 Mix it well
04:53 Do not dry roast the mustard
04:57 Dry roast the other spices
04:59 After mixing the mustard
05:01 Add salt
05:03 Add salt as per taste
05:07 Add 1 spoon of salt
05:10 Mix it well
05:12 The spices are ready
05:16 Now mix it once more
05:20 We have mixed the spices in the jar
05:24 And it has released its juice
05:26 Now add the spices
05:31 Add it in a good quantity
05:34 Add 3 to 4 spoons of spices

05:45 Add some oil
