00:11 Today we are going to make Sabze Uttarakhand
00:13 Yes, this is a specialty of Uttarakhand
00:15 The important ingredient for this is sprouted moong dal
00:20 which we have blanched, i.e. we have boiled it in boiling water
00:23 and then we have taken it out, it has not been fully cooked
00:26 and the second important ingredient is this chutney
00:30 Yes, this is a chutney of coriander, mint, ginger and green chilli
00:35 It has 1 medium bunch of mint, 1 medium bunch of coriander, 5 green chillies
00:40 and a half inch piece of ginger, it has been ground and salt has been added
00:44 These are the two important ingredients, the rest are regular spices
00:48 Let's start making Sabze Uttarakhand, it is a very healthy dish
00:52 So let's start the gas first
00:57 First we will add 1.5 tbsp of oil
01:02 Spread the oil in the pan as usual
01:07 and then we will add 4 garlic cloves finely chopped
01:19 Let the garlic cook
01:23 It is very cold in Uttarakhand and garlic warms us up
01:28 That is why garlic is used a lot in all dishes
01:33 You don't have to brown it completely, just let it cook a little
01:43 Now the garlic is cooked, we will add 3 whole red chillies

01:55 If it burns quickly, add 1 medium sized onion

02:09 As I always say, if you want to cook the onion quickly, add a pinch of salt

04:06 Remember that you have already added salt and there is salt in the chutney

04:23 Now we will let it cook for about 8 minutes
04:27 So that the rawness of the moong dal is also removed
04:30 And all the spices are mixed well
04:33 And the garlic flavor is also absorbed
04:35 Let it cook for 1 minute
04:38 So 1 minute is over
04:40 Our vegetable egg is cooked
04:44 Now the most important ingredient will be added to it
04:48 That is this chutney
04:50 Spread the chutney on the egg
04:53 Add the chutney in such a quantity that it turns green
05:01 Add 2-3 tsp chutney
05:07 Because it will have only the flavor of chutney
05:10 Nothing else will have a strong flavor
05:13 I think the chutney is still less
05:17 So let's add some more chutney
05:20 Add 1-2 tsp chutney
05:27 Stir it on low flame
05:32 We have to cook it lightly
05:38 Chutney is not cooked much
05:40 You can add chutney to anything
05:42 Cook it lightly so that the flavor spreads all over
05:45 And the flavor has spread all over our vegetable uttarakhand
05:51 Now we will add a little lemon juice
05:55 Not much, just a little quantity
05:58 If you want you can add chaat masala to it
06:05 It also gives a very good spicy flavor
06:08 Now turn off the gas
06:14 And serve it
06:16 Add lemon juice on top
06:18 And garnish with coriander
06:21 Let's serve it
