00:00 Welcome to Veg Plus Cooking. Today I am going to make a very famous recipe from Bengal.
00:24 I have seen very rare recipes that are so simple and have such a good output.
00:31 This recipe is called Eggplant Bhaja.
00:34 It is an ideal recipe for bachelors.
00:37 If you ever eat out and want to cook something at home, then you cannot make anything simpler than this.
00:43 And nothing can be made more tasty and simple than this.
00:47 So all these bachelors who are watching, they should definitely try it.
00:52 For Eggplant Bhaja, we need very simple ingredients.
00:55 Take some chopped eggplant, some red chilli powder, coriander powder, garam masala, turmeric and salt.
01:04 We will add chaat masala at the end to enhance the taste.
01:10 First of all, take the eggplant and remove the portion. Then slice it thinly.
01:26 Do not keep it too thick or too thin.
01:31 After slicing, do not keep it in the air for a long time. Add some salt and mix it.
01:40 Apply salt on all the slices with your hands.
01:45 Then add turmeric.
01:51 Now add some oil and red chilli powder as per taste.
02:02 Add some coriander powder and optional garam masala.

02:21 As soon as we add salt to the eggplant, it starts releasing water.
02:24 Now spread the oil well.
02:27 And then add the eggplant slices one by one.
02:38 Let it cook for a minute and then flip it.
02:44 It's been a minute, now flip the eggplant slices.
02:49 Let it cook from the other side as well.
03:02 Let it get a nice brown coating.
03:06 Now add some chaat masala.
